Air-Fryer Granola

I love having variety in my diet and breakfast is no exception. I still believe if we want to reduce cravings the first meal of the day should be balanced—and this air fryer granola totally hits the mark. It’s quick, crunchy, and packed with goodness. I love serving it with a generous dollop of Greek yoghurt and a handful of fresh berries for that perfect mix of textures, flavours, and nutrients. A super satisfying start to the day!

Ingredients

  • 150g jumbo oats

  • 50g quinoa flakes (or use extra oats if preferred)

  • 200g mixed nuts, roughly chopped

  • 75g pumpkin and sunflower seeds

  • 2 tablespoons chia seeds

  • 2 tablespoons flax seeds

  • 2 teaspoons ground cinnamon (or to taste)

  • Pinch of salt

  • 1-3 tablespoons maple syrup (optional, replace with an extra tablespoon of peanut butter or olive oil)

  • 2 egg whites

  • 1 tbsp peanut butter ( add an extra tablespoon if not using maple syrup

Instructions

  1. Mix dry ingredients
    In a large bowl, combine the oats, quinoa flakes, chopped nuts, seeds, cinnamon, and salt.

  2. Mix wet ingredients
    In a separate bowl, whisk the egg whites until peaks form then add the maple syrup (if using), and peanut butter until smooth.

  3. Combine
    Pour the wet mixture over the dry ingredients and stir well until everything is evenly coated. You are aiming for the oats to be like damp sticky sand

  4. Air fry
    Preheat your air fryer to 160°C. Spread the granola mixture in a single layer in the basket and cook for 15–20 minutes, stirring halfway through.

    Note: If your air fryer is small, you may need to cook in two batches.

  5. Oven alternative
    If you prefer, spread the mixture on a lined baking tray and bake at 160°C for 25 minutes, stirring halfway through to ensure even colouring.
